I've noticed it performs well even with a stronger desktop CPU; it ran smoothly. I increased the RAM to 3GB and everything worked perfectly.

ZorinOS or Mint (Cinnamon) could be suitable options. Navigation remains consistent across most GUI-based operating systems.

Xubuntu or even better Lubuntu would be ideal. Your grandma wouldn’t notice the difference between lxde and XP. PS: Why are you okay with giving a struggling grandma Win8, but not Unity?

No, not Ubuntu. Xubuntu, Lubuntu, or using Ubuntu with that awkward Unity version is too demanding for your machine.
