I'm struggling to understand how popular people are getting source MP4s and then sharing edited versions on channels like GTA 6 trailers with the OST and game files. Are they actually playing the game locally, making edits one by one or using a special method? This process would take days or weeks and require a lot of effort. Also, I'm curious why the music doesn't get them into trouble on YouTube—there are already 10 videos with it and it hasn't been removed. Or maybe the song is safe to use in some way under copyright rules. I feel a bit annoyed that this information isn't mentioned in Google Support articles. People seem to be doing it without issues, which feels unfair if you ask me.

Rockstar won't pursue a major YouTuber due to potential severe negative publicity, and if Rockstar doesn't act against them, there should be no issues.
The automated YouTube editing that removes content must be provided by Rockstar, otherwise their material won't be edited.
Alternatively, it might simply take some time before all videos are removed...
