It seems the exact frequency doesn't matter much as long as the Mac supports up to 800 MHz sticks. A quick search shows 2007 Imacs with Core2 Duos used around 667 MHz sticks, though later models had 800 MHz FSBs. It makes sense to match memory sticks to a 1:1 ratio.

The quickest DDR2 chip I've encountered is the PC2-8500 at 1066 MHz, but I haven't seen it in 4 GB SODIMMs. The top 4GB SODIMM speeds I'm aware of are the PC2-6400 at 800 MHz. The difference in speed probably won't be noticeable on a machine that's over 13 years old.
