I believe they mostly use the same cables, and the newer ones make it simpler to manage the wiring due to additional wire between the capacitors and connectors. I currently have an RM750x from 2021 connected with its cables, but if possible, I’d prefer to replace the existing unit with a 2018 model I own. Would that be a viable option?

I'd suggest it's not a good idea unless you confirm it works with Corsair power supply support.
It depends on how lucky you feel and how you react if things go wrong.
What could be your main reason for thinking they use similar cables? Maybe just a guess or quick check?

I would replace the PSU with its own cables rather than just adjusting the units. Check both devices to determine the PSU type; if they are Type 4, the cables can be swapped. I wouldn't take the chance if it were you...assuming you'd be short on cabling work.
