Less voltage is consistently preferable, meaning it can go down to the lowest levels while still keeping stability at 4.8ghz.

Consider adjusting gradually, testing stability one step at a time. Increase by 1-2 notches when needed. Lower voltage usually improves thermals.

I noticed during overclocking my 8700k, using RealBench stresstest for 15 minutes helped assess stable voltage before a longer test. I recorded 4.7 at 1.2v, 4.8 at 1.225v, and am now at 5 at 1.315v.

You're doing well at 4.8GHz with your current setup. Pushing to 4.9GHz or 5GHz could be beneficial, but make sure your cooler and case can handle it. Your Kraken X62 AIO and Asus ROG Strix 370-F should support higher speeds if the cooling stays solid.

The main reason I’m holding back from pushing to 5ghz is the temperature limits. Currently I’m around 33-77°C at 1.260v.

Try and lower your voltage as much as you can and run Realbench for 2 hours to see it's stability. This is old photo but im doing 5.0Ghz @ 1.200 V now With my room ambient at 30-35 normally.
