I have a Lenovo Legion 5 (15ACH6H) with one stick of 8 Gb RAM and a 512 Gb SSD. I’m looking to upgrade both. Can I simply install another RAM stick with similar specifications so it works in dual channel? I used the Crucial advisor tool which suggested: Crucial 8 Gb DDR4-3200 SODIMM, DDR4 PC4-25600, CL=22, unbuffered, NON-ECC, 1.2V, 1024 Meg x 64. What should I choose—one or two sticks? And will it fit a full-length M.2 drive?

Laptops are generally more adaptable when it comes to mixing different DIMMs. So if you acquire another stick with compatible timings, it should function well. The mem tool from Crucial can definitely help guide your selection.
It seems the model with 8GB RAM supports the M2 2280 size, while the 3050ti uses a smaller M2 2242:
