I have these components right now...
Ryzen 7 3700x
Radeon RX 5700xt
16 gigabytes of RAM
Mostly a gamer, but this setup can't run the newest games anymore. I'm looking for recommendations on the best CPU or graphics card upgrades to get the most value. Thanks for your help!

I’m not sure about my power supply but would be happy to upgrade if needed.
Is this a monitor rated for 60Hz? 120 or 144? That also counts, since higher frame rates (for better visuals and gaming) require stronger hardware.
We understand that getting good value for money is key, but what’s your budget like? Which games are you aiming to play? Are you comfortable with medium settings, or do you want the display to be top-notch?
Are you located in the US? If yes, are you close to a MicroCenter? If not, where do you plan to purchase and do they have an online store?
it depends on your budget, 3700x offers 3700x while old is a strong CPU choice. I’d likely switch to a 7900xt first, paired with an 850w PSU, then move to a 5800x3d later. The 3700x could become a bottleneck, but upgrading to a 5800x3d or directly to AM5 7700 would work well in the future! Personally, I believe you’ll get better value from a GPU upgrade than just a CPU upgrade.
I understand the 7900XT (or 4070Ti for Nvidia enthusiasts) makes a solid pick for 1440p if it fits the budget.
However, it will face major limitations against the 3700X. If short-term it's acceptable and the budget restricts having both GPU and CPU simultaneously, then prioritizing the GPU first is right—consider upgrading to a full platform like the AM5, or go with the 5800X3D if needed.
