It's wise to restore your system settings to the original configuration prior to updating the firmware, for safety reasons.

It varies. I experienced the same issue with my z170 when using Evga classification, and after updating the BIOS, my settings remained unchanged in BIOS. I’m not certain about all boards, but it seems consistent for mine.
