Will Windows 8.1 install all the drivers I need? I know if you give it time it will install most of the nvidia/etc drivers. But is relying on Windows update alone for drivers a good idea?

Typically, it doesn't require any drivers to be installed.

Always mentioned that Windows comes with basic drivers for most functions, though they tend to be poor quality. You should obtain them separately—they’ll perform significantly better.

Certainly! After a new Windows 8.1 installation, you should first allow the updates to complete, then manually download drivers for your CPU, motherboard, GPU, and storage drives.
