You're setting up your first PC with a solid configuration. For gaming and editing, the R7 3700X is great, but you'll likely need more RAM (16GB+ recommended) and possibly a dedicated GPU if you plan heavy graphics work. A separate monitor setup with distinct mouse and keyboard will help keep things organized. No extra GPUs are necessary unless you're doing advanced tasks. Add adapters only if you need extra ports or connectivity options.

It's quite challenging to configure this way, so I suggest you consider building a different PC.

I’d evaluate a thin client for your media center and consider trying PARSEC. It would let you manage your PC remotely without needing many cables.
