You're asking if it's possible to install OS X Yosemite on a second hard drive using UniBeast while running Windows 8.1 on the main drive. It sounds like you want to switch between the two operating systems depending on what you need—using Yosemite for video editing and Windows 8.1 for general tasks.

They’re likely allowing you to pick the operating system during startup. This was the case with Ubuntu.

Sure, just set up a bootloader and you'll be asked to pick the operating system each time you start up.
