Certainly people require many monitors. When the main video card offers only 3-4 outputs, integrated graphics can provide 2-3 more. It's unclear how effectively this works, but in theory you might use AMF (hardware encoder) to encode videos through the integrated graphics instead of the dedicated one. However, you wouldn't see performance gains when playing games or streaming since the hardware encoder is separate from the GPU chip, which handles the game directly. You still have two hardware encoders available, so if you need to convert many videos, you could split them into two groups and use a separate encoder for each batch.
