You can adjust the taskbar layout in Windows 8.1 to have only one on your central monitor. Check the settings for "Taskbar and Start Menu" and look for options to reposition or hide it from certain monitors.

If possible, try using Surround or Eyefinity. If not, I can't confirm. I personally use surround and it doesn't cause this issue.

On a Windows 8 setup without a multi-monitor machine, simply right-click the taskbar, select properties, and ensure the option is turned off for showing the taskbar on multiple displays.
