You can extract metadata from Unraid and import it into Hex OS by using a tool like Hex Editor or Hex Fiend to parse the Unraid metadata files, then manually copying the relevant data into Hex OS.

They’re not free tools—you’re paying for them. Still, you can reach out to their support teams. From my perspective: I don’t receive any value from them, while they provide free assistance. It doesn’t add up. So this is essentially the same help you’d get elsewhere (maybe some users are more helpful): Unraid support page, HexOS help at hexos.com.

Plex is also a premium product since most features are limited without upgrading. They offer extensive instructions for transferring your library to another device. I’d prefer using Linux-to-Linux techniques. Usually this means moving a folder from one storage to another and relinking your library folders.
