I've noticed that option in Rufus but mostly used MBR or GPT. I thought everything should be UEFI now, but it turns out I accidentally installed the OS as CSM this time. It's funny how things come back to haunt me. Some tech folks here seem puzzled about their daily work. If you boot up a machine and see KMS running, you might get frustrated—especially after someone broke a window on your laptop! Yeah, I did that too, just to avoid getting fired.
It's feasible to change a UEFI Windows setup to an older format while keeping all information intact. I've tested this with Windows 8.1, but I can't confirm it will function with Windows 10.
