You can use cloning tools like AOMEI Backupper to create backups. Note that version 2.X needs a premium license for full drive cloning, while version 1.x allows basic partition cloning. Symbolic links tied to drive letters might cause problems on Windows, and Linux users should be cautious with such configurations.

It shouldn't cause any problems switching from a single drive to a raid 0 setup. You'll need a third drive to install your system when building the array. I used this approach with my Intel 330 series after seeing that 240GB wasn't sufficient. The built-in system image tool in Windows 7 and 8 works, but there might be compatibility issues with Windows 8.1 if you upgraded from it.
