In real use, the differences between Windows 7, Windows 8.1, and Windows 10 for gaming will be minimal, except for DirectX12 support when required. I’m comfortable handling Windows 10’s oddities, so I’d recommend it for its latest features. However, if you prefer something simpler, Windows 8.1 with the Classic Shell Start Menu is a solid choice. It offers a familiar interface like Windows 7 while providing the newer kernel and many updates—like the much improved File Transfer tool, which is a standout feature over Windows 7.

Windows 8 is no longer supported and doesn’t receive security updates. Still, version 8.1 brings many improvements to daily use. What some call a bad experience usually means two things: the new modern interface (Classic Shell Start Menu) and the previous system issues (Windows 8.1 fixes).
