I rely on HWmonitor http://www.cpuid.com/softwares/hwmonitor.html which displays temperatures and other data for nearly all parts.

Additional tools include MSI Afterburner, OpenHardwareMonitor, and HWiNFO. Speccy is also used, though I believe it's mainly for temperature monitoring.
