5600x offers performance close to 5700x. The main difference is the number of cores, which is slightly higher in 5600x. Choose 5600x if you want more cores.

It depends on the GPU you're considering. If it's around a 3070, performance will be similar for both options, and the extra cores from the Ryzen 7 won't make a big difference in gaming.
