The 5600x would be simpler and cheaper because you wouldn’t need to swap the motherboard. It also handles esports games much better. (Choose the 5600x) While your 3600 seems fine for 1440P, I’d suggest upgrading your PSU. A 5600x with a 3080 and a 650W low-end unit? No way.

@Big-Boy, @jaslion, @Sp4gh3tti It's unclear why everyone keeps suggesting the bare minimum PSU. If I followed advice, I'd go with a 650W for my 5900X and RTX 3080/3090 (still undecided), since that's sufficient. An 850W would feel like a lot more than needed.
