If you enjoy it, there’s no need to change from iTunes. People often get annoyed by switching too soon, but it’s okay to stick with what works for you. Personally, I prefer Winamp instead of other options.

I favor foobar2000. It’s straightforward, functions well, and offers great flexibility for detailed customization.

I share the same concerns, as it requires up to 256,000 MB of RAM just to play music. It doesn’t handle many formats well and feels slow with large libraries. The installation adds many unnecessary Apple components. It’s bloat, and players like Musicbee are much simpler to set up. Just because a player offers customization options doesn’t mean you need them. Musicbee works great for those who want a straightforward experience.

It's not exactly what you're looking for, but given how many people dislike it, it might be worth checking out what others have to offer. I got foobar and am testing it now; the layout feels pretty awkward—definitely some nice skins exist.

I prefer Clementine, even though it isn't super adjustable, but it's straightforward, fast to start, which is really important for me.
