You can achieve this using a centered pan, completely dry audio, and you're not limited to just picking one track. Even after finishing, the voice remains audible. As mentioned, you can't isolate the vocal alone.

I understand you can't fully remove a vocal from a stereo recording, but there are methods to reduce it enough for karaoke use. The result won't be as pristine as keeping the vocal muted during reprinting, though you can achieve a good approximation depending on the track.
