Your saves are located in Documents > Rockstar Games > GTA V > Profiles, specifically the SGTAxxxxx files. You’ve backed them up and copied just those files, which should function correctly.
I handled it differently before, yet the game brings me right back to the start. I've heard you should gather a few additional files within the installation directory.
