Recently set up Linux Mint 19 on my PC using dual boot—separate drives for HDD and SSD. Windows runs on the other drive. Can't offer much assistance, but you might find some online CTF competitions useful. Those are the places where I've spent a lot of time cracking, injecting, and "hacking." Maybe look for a project you like—like Lutris?
I'm facing the same challenge. I had extra server components and gear at work and combined them. I have two xeons and 200GB of RAID 1 storage, running Ubuntu Server. I'm using SAMBA to set up a network file share so devices like Raspberry Pi can access it. It's essentially a DIY solution that could save us a lot compared to buying ready-made products.
