It might work just fine with a 3600 or even a lower-end 2700X if you want the core performance. Alternatively, opting for a last-gen 2700X would give you the necessary cores at around $135 on sale.

the sole justification for purchasing a 1900X is if you require quad channel RAM or massive PCIe connections. otherwise, you're essentially committing to a costly and largely outdated X399 design. even the early TR versions faced significant challenges before being refined in later generations

They're affordable, but including the motherboard price makes it less worthwhile unless you specifically require 60 PCIe lanes or more than 128 GB of RAM. For example, a Threadripper 1900x achieves 16k points on cpubenchmark, while the Ryzen 3600 scores 20k points and x570 boards support PCIe 4.0 with 128 GB of memory.

I recently purchased a nearly unused 1900x + Gigabyte X399 Aorus Gaming 7 for a work arrangement. My workflow involves heavy editing with Lightroom and Photoshop, plus video timelapses from RAW to Premiere and After Effects. I’ll also be gaming and streaming during free periods this winter. I’ve heard Single Rank Memory is optimal for Threadripper, but does that apply to all models with high core counts? If so, would disabling certain RAM in BIOS impact gaming performance? I’m looking for the fastest 8x8 setup possible.

It isn't the best fit for your needs, but it should still work. The first-gen TR has some serious memory controller issues when all DIMMs are loaded. You'll probably be limited to a maximum of 2933 units.
