The setup works fine. The PSU provides enough power for both the Ryzen 5 3600X and the RX 6750 XT, and the cable configuration is compatible with your GPU's requirements.

In my opinion, it should work. Do they include the PSU with several PCIe cables?

They send the PSU using only two cables, one connecting 8 PIN to two 6+2 pins

Yes, two separate cables are correct. Each cable contains over 6 PCIE connectors on the GPU side, making a total of four times six plus two. You're wondering if using just two PCIE cables means each one has to handle the full GPU load. That's not accurate. The 6750 XT likely draws around 250 watts, but most of that won't come from a single connector. It probably comes from multiple terminals. Also, unless you're running heavy benchmarks, your GPU usually won't hit that maximum draw consistently.

I have two individual 8-pin connectors on my power supply, and on the other side there are four 6+2 pin connectors. Now I'm connecting one cable from each splitter together.

Just connect both cables together, keep the 6+2 connectors on each unused. You can secure it with a zip tie for neatness, but don’t pull too tight so the main cable isn’t pinched.
