Citing sources tends to work better than tagging them. For example, Apex Legends could run smoothly at 60 FPS with Ultra settings, but in Assassins Creed Odyssey it's nearly impossible to hit that speed with all settings enabled at 1440p on a 2060 monitor.

From what I know, the top projects include Project Cars 1&2, Assetto Corsa, Cities Skylines, and GTA V. Maybe Ultra settings in GTA V are tough to beat, and performance really depends on your CPU too. Other games might follow similar trends.
