Similar to WereCatf, unless there are worries about your CPU getting too hot, you shouldn't stress over changing the thermal paste again.

They simply follow the data from the sensors; accuracy comes from the app connecting properly with the sensor and the sensor functioning correctly. A reliable app like Hwinfo64 works well for temperature checks.
