With a Xeon, the number of cores you choose doesn't really matter because multithreading doesn't function well with Minecraft servers.

In that scenario just purchase a 2500k or prepare for a 3570k and push it hard using throttle stop plus voltage adjustments via CPU pads. Since the maximum voltage you can apply is 1.52, which is well below the dangerous range (deathzone around 2v, safe max ~1.7v), the main concern is whether your VRMs can handle the heat. The 3570k is recommended because it’s a better overclocker despite drawing more power.

Lga 1155 xeons perform a bit like slightly slower i5 and i7 models. For most users, single-core speed is key, and even with the best upgrades, you won’t see much improvement. I recommend planning for a newer system instead.
