It depends on the amount of data and whether the Mac uses an SSD or not. You shouldn’t stop the encryption unless you’ve already done so.

I believe 3 hours isn't enough time for 40G. My estimates suggest around 1.5 hours on an i7 with an SSD. What's your processor model?
