When I turn on XMP in the BIOS, the NVME appears but disappears from the BIOS and Windows once the changes are saved and the system restarts.

If the bios doesn't recognize it, that's a valid explanation for why windows won't see it... focus on improving the bios.

It looks like fixing the CMOS resolved the issue. A-XMP turned on + UEFI boot and my NVME is now visible in both Windows and BIOS consistently! Restarted several times just to confirm. Appreciate it!
