RAM: HyperX Predator 32GB RAM (2 x 16GB) 3200Mhz DDR4 CL16 1.35V, High Performance Desktop Memory Motherboard: ASUS TUF Gaming X570-PLUS (WI-FI) ATX For AMD Ryzen 2nd/3rd Gen CPU,AM4. Default is 2400 unless you change the profile in BIOS to 1. After restarting, it crashes a few times and resets the BIOS back to 2400. Profile 1 shows 3200, profile 2 shows 3000. What should I do?

You're facing a lot of memory traffic that limits performance. The 2933MHz clock speed could work, but it's tight. Those ninjas are really good at this kind of stuff. 😄
I think the maximum speed for running RAM is 2400Mhz. It will likely function, though slower than higher speeds.
Load the xmp profile normally then reduce the RAM speed to 2933MHz, this should likely succeed. My Asus B350 on a 2600 struggles above 2933MHz (can't post from cold boot), 3133MHz is the highest stable I can achieve with adjustments. If you attempt posting at 2933MHz, try increasing it to 3200MHz occasionally; it sometimes works.
Setting at 2933 works nicely, offering a big boost compared to my previous 2400. Ideally though, I'd like to use the full 3200Hz RAM I bought, which seems possible with a more powerful CPU. But the motherboard compatibility list doesn't mention this RAM, so it might not be available. Still, maybe later this year I'll need a faster CPU for other reasons and will check if that helps.
