I decided to keep the settings as they were. The DPs are now showing 165Hz on both, which matches the Nvidia control panel. It looks good.
When everything is configured correctly, leave it alone and keep this in mind the next time you disconnect your displays. If an older DP cable is the problem, consider replacing it.
