Model: Gigabyte A620M DS3H
Processor: Ryzen 5 7600X
Graphics: XFX 7900 XTX
Memory: 2 x 16GB Vengeance 6000 MHz (EXPO ON/OFF remains disabled)
Cooler: DeepCool AK620
Power Supply: Seasonic B12 850W 80 Plus Bronze
Performance: Stops immediately after stress tests from AIDA64 and FurMark. Possible PSU issue? Also occurs during gaming—shuts down silently, temperatures normal. Assistance needed!
Note: Only two cables connected to three GPU 8-pin ports; one was daisy chained, hoping it’s okay.

Your PSU is quite old and doesn't match the specifications of high-performance GPUs such as your 7900 XTX. These modern graphics cards require significant power, which your current PSU can't handle.

The power supply has been sitting on a shelf for about three months, waiting until yesterday.

As previously mentioned, the PSU is probably the main concern no matter how old it is.
A couple to look into:
(1000w): https://seasonic.com/atx3-focus-gx
DARK POWER 13 | 1000W silent high-end Power supplies from be quiet!
No compromise silence and performance

I just looked and the power button remains active after shutdown. This supports the PSU theory. Thanks for the advice!

Test this method to observe the outcome. Go behind your system and turn off the PSU power switch. Then press the power button to remove any remaining power (this might seem odd, but it's important). After that, switch the switch back on. Does the power switch light up?
