I have an ASUS ROG STRIX B550-F and an ASUS X570-PRO motherboard. Both perform the same function, but when power is off, I notice the CPU fan activates if the 8-pin connector isn't connected, even though it stays on when connected. I've used two different PSUs to rule out the issue with the PSU. Anyone else experience this problem with these ASUS boards? Please advise.

It can't be the PSU since it's operating in a single unit; the likelihood that both motherboards are new and from ASUS is low, suggesting there might be an issue with how these boards are set up.

Could you clarify which component you're referring to? The PSU stands for power supply unit.

You can choose the arrow with a + to quote. Just because the motherboard functions doesn't guarantee the CPU is okay. Unless you're confirming the system started in Windows? That wasn't very clear from your message. I'm not sure the CPU is the issue, which is why I thought it might be. Can you try testing it?
