I found an old PC here: https://www.ebay.com/itm/392167288262. I have an i5 2500k with the original cooler. The motherboard has a strange backplate, making it impossible to fit the CPU cooler properly. Should I get a backplate or remove it? Any advice would be great.

You possess an OEM board. Taking out the backplate, if feasible, should resolve the issue.

The backplate secures the CPU retention system in position. Removing it requires reinstalling it with fasteners or washers to maintain proper function.

The stock cooler is unlikely to fit this model. It seems the backplate can't be removed—it's a custom motherboard built for a specific PC, possibly using an unusual cooler. The design might only match the original cooler, making it hard to source a compatible replacement unless you locate the exact one they used. You could remove the brackets and cut away the obstructing corners before reattaching the socket, then install the cooler. Unfortunately, your main option is to look for a standard motherboard model instead.

Removing the screws for the ILM would likely lead to the backplate detaching. You could then swap it with another ILM from a Broken LGA 115x board.
