I start the game using the executable or GOG client, yet it only opens in a small window. When I attempt to make it full-screen, it refuses to do so.

It's the quick way to switch to fullscreen, I rely on this when the menu isn't reachable and the resolution isn't correct. All games are designed to launch in fullscreen too; updates typically address major issues. If the issue persists, it's likely due to your graphics settings.
