I recently upgraded from Windows 7 to 10 and Assassin’s Creed Odyssey now crashes upon launch, despite functioning correctly on the older operating system. My other games operate without issue.

Clean OS installs are always less prone to problems. If you are unfamiliar with Storage Space, you likely have not configured it.
