In GPUz, the "log to file" button located at the bottom left allows you to export data. This method enables you to create graphs by importing the information. Various data formats can be logged.

Afterburner is excellent, but it doesn't display the chart precisely as shown. It's highly likely they built the chart from gathered data points. However, you should still be able to view both clock speed and temperature to attempt creating your own graph.
