Currently, all fans are running on CPU, but I’d like better tracking of system temperature. I’m not sure where the temperature monitor is located (MSI MPG Z390 GAMING EDGE AC).

Refers to the BIOS or desktop setup. In BIOS it's typically labeled "hardware," where you adjust sensor temperatures and fan settings with curves or auto modes. On the desktop, I favor using HWiNFO - Download for monitoring.
