It depends on what you're doing, but with 6GB RAM and 2GB VRAM on a Mac running High Sierra 6GB, you should be able to handle most tasks smoothly. Photoshop and other apps usually don’t struggle much, but heavy multitasking or demanding projects might feel a bit slow.

Photoshop is no longer compatible with macOS High Sierra, and similar issues affect other software such as Office. The Nvidia GPU version isn’t recommended for laptops at the moment.

If you turn off the dGPU, Monterey might start working again. The Ice lake iGPU performance is decent, but it really depends on your specific GPU. Also, macOS High Sierra may not support the dGPU—you haven’t mentioned the exact model.

He seems really confused about why he's setting up such a complex Hackintosh environment with GPU passthrough... Initially, I thought it was for Xcode, but using Apple hardware just to compile and sign apps feels like a huge unnecessary task. Now I wonder if he's planning to run PS on it?

You might want to heed what @J-from-Nucleon recommends. Given your i5-1035G1, it’s likely more practical to try macOS or switch to Windows 10 with a compatibility fix. I’m not sure what you’re aiming for, but those options are worth exploring.
