I built this PC about two months ago. During that period, the monitor has changed color unexpectedly, audio starts acting weird, and after a short while it restarts itself. It’s been really exhausting. The system uses a Ryzen 5 3600, Asus Prime X570-P, G.Skill Trident Z (2 x 8GB DDR4-3600), Gigabyte Radeon RX 5600 XT 6GB, and EVGA SuperNOVA GA 850 W with Gold drivers. Everything seems up to date.

I don’t understand how to resolve it, but this occurred once. I was watching a Linus video and suddenly Linus started speaking mid-sentence, the audio cut out completely (because I think Linus was saying something clever), and the screen went all blue and then mostly looked like Linus. About ten seconds later it restarted and hasn’t happened again. I have a Ryzen 5 3600 and GTX 1660 Super edition.

kept everything at normal speed, hesitant about pushing limits in the tempts range of 45c to 70c.

It could be related to your HDMI or DisplayPort cable. Consider replacing it with a different one.

Do you have another GPU available for testing? If yes, use it and check if the issue resolves to determine if it's a GPU problem.

Any GPU that fits the slot is acceptable for testing—even inexpensive ones work. The best way to confirm issues is to actually run it and check what happens.
