The three middle switches appear to manage link aggregation, though it seems unnecessary for the IoT devices involved. They could offer redundancy in case of a single device failure, but this might not be ideal given the limited bandwidth needs. Security benefits are questionable unless the switches support VLANs and are managed properly.
