I've located an ITX X570 board that allows splitting the x16 port into four x4 ports. The Ryzen 3 3200G can handle this configuration, so you don't need to upgrade your processor.
Well, your choices are quite narrow for a screen setup. You might find the Ryzen Pro 4000 series APU appealing, though availability can be tricky in certain regions. Also, it’s unclear if it handles the X4X4X4 requirement smoothly.
I faced the same problem before. My current Intel Xeon E5-2690v2 is outdated, so I’m considering swapping it for a Ryzen APU. However, finding a Ryzen 7 Pro 4750G is really challenging right now. Chinese sellers are charging over $500 for it. I’ve chosen to pause the project and keep using the older Xeon until the CPU market recovers.
