8GB is sufficient but you probably won’t require the NVME speed. It’s similar to PCIe Gen 4—it’s handy for testing but only matters if you really notice it. I’ve used NVME for some time now, and it doesn’t really change much compared to an SSD. I just kept it for the extra cost and because it was a nice bonus. For studying, a laptop with a SATA SSD and 8GB RAM will work just fine.
