Checking which CPUs can be removed without soldering is a good idea. You mentioned the newer models, but you're curious about older ones like the Pentium G620, G2120, Xeon E5-2620, i7-870 and i3-550. Let's see what options exist for those.

I believe the 9th generation and above were all soldered. Anything below should be excluded if I recall correctly.

Early versions had soldering, newer ones follow the same process, and there were periods without any changes. It might not be practical to halt and restart.

Haswell was the initial model to cease soldering, Haswell-E remained attached but Broadwell-E did not.

It could have been. I understand the 4770K was the first CPU people began to use consistently, though it might have occurred a bit earlier. Sandy Bridge was certainly still in production.
