The file explorer messed up my downloads folder and started sorting it like music. I don’t know how to revert it back to normal, but the sorting options are showing up instead of the usual settings.

Select the folder by right-clicking -> Properties In the "Customize" section, choose "General items" within "Optimize this folder for".

Choose the desired folder and tap Home > Properties (click on properties). A popup will appear. Find Customize under "Optimized this folder for:" and select general or documents. The optional checkbox applies the same settings to subfolders. Click OK. Let me know if this assists.
