I've found HWmonitor helpful for real-time readings, but for visual trends you might want alternatives like Grafana or Power BI. They let you create charts and track temperature changes over time effectively.

HWiNFO is ideal for detailed monitoring. Setting it up can be time-consuming, but the results are valuable. MSI Afterburner displays graphs, though you'll need to widen the window for extended use. Aida65 and OCCT provide temperature readings on those graphs, and OCCT also offers logging capabilities, though only during stress tests.
