I enjoy Fruity Loops though it's pricey, Audacity works well too.

FL Studio is solid—I rely on it. Abelton Live, Reason, Cubase, and several others are also popular. I’d rank them by how often I use them, but treat FL Studio and Abelton equally. Both are strong tools with distinct workflows. Find the one that suits you best.

From Apple's perspective, I relied on GarageBand and Logic Pro for mastering and mixing. Audacity was available on both Windows and iOS, while ProTools was another option. Other tools like Cakewalk Sonar and CuBase were also used, but the top ones were the software I studied for my Diploma in Music and Audio Technology a few years back.
