Hey, just got a Huawei Ascend G510 running Android 4.1.1. Can I root it to Lollipop? I've checked online, but most results seem to be scams. Any suggestions?

You can install it on Android 4.4.2. It's a nightly release and hasn't been updated recently, so stability might be an issue.
Cyanogenmod could be an option, XDA Releases is the top choice, AOSP might offer something too. Keep an eye on Android 5 and above—device encryption is active, and if your processor can’t handle it, performance will drop, causing lag. You may need to apply patches to enable encryption without slowing things down.
Probability it won’t work, especially with devices from late 2014. I think only the newest models—like Tegras, Qualcomm Snapdragon 8 Series, and Exynos 5+—support it. I’m not sure about media sources, but I shouldn’t quote me too much. You can install scripts to turn it off, but they erase the device and reinstall Android. If it’s on a non-rooted Google version, updates will be blocked completely.
